Lamb Steaks with Mustard Sauce

Ingredients to serve 4

  • 4 lamb leg steaks
  • 3 tbsp olive oil
  • 2 small shallots
  • 150ml white wine
  • 200ml crème fraîche
  • 1 tbsp wholegrain mustard
  • 1 level tbsp Dijon style mustard
  • 1 tbsp chopped parsley
  • Salt and pepper
  • Take the lamb steaks out of the fridge 30 minutes in advance of cooking.
  • Heat 2 tablespoons of oil in a saucepan.  Chop the shallots very finely, add them to the saucepan and cook them for 1 minute. Cover and leave to sweat for 5 minutes on a very low heat.
  • Add the white wine and reduce by half over a medium heat. Next, add the crème fraîche and the two types of mustard. Simmer gently while the lamb is cooking.
  • Heat a large non-stick frying pan until hot. Brush the steaks with the remaining oil, season and cook for 2 minutes on each side, then reduce the heat and continue to cook depending on your preference and the thickness of the cut. Transfer the steaks onto a plate and keep warm. 
  • Pour the sauce into the frying pan and scrape up the cooking juices. Add the parsley and adjust the seasoning.
  • Serve immediately with chips and a salad

Tip: The combination of wholegrain mustard (for its mellow flavour and the crunch of the grains) and Dijon style mustard (for its intensity) make this sauce perfectly balanced.
