Turkish Lamb and Aubergine Pizza

Turkish Lamb and Aubergine Pizza

Ingredients
  • 3 lamb leg steaks, trimmed (300g) and cut into thin strips
  • 1 tablespoon olive oil
  • 1 red onion, peeled and finely sliced
  • 1 aubergine, trimmed and cut into small cubes
  • 2 garlic cloves, peeled and crushed
  • 1 teaspoon ground paprika
  • Salt and freshly milled black pepper
  • 150ml tomato passata
  • 400g ready rolled pizza dough
  • To serve
  • 80g feta cheese
  • 1½ tablespoons freshly chopped mint
  • 1 tablespoon honey
Method
  • Preheat the oven 220°C, 200°C Fan, Gas Mark 8.
  • Heat half the oil in a large non-stick frying pan over a high heat. Quickly fry the lamb for 2 minutes until brown. Transfer to a plate.
  • Add onion to the frying pan and cook until soft, add the aubergine and cook for 5-6 minutes until golden and then add garlic and paprika. Cook for a minute and season.
  • Unroll the pizza dough onto a large oven or pizza tray (30cm x 8cm)
  • Use a spoon to smear passata onto the pizza dough, top with cooked onion, aubergine and lamb.
  • Place in a hot oven for 10 minutes until crisp.
  • Crumble over the feta cheese,then sprinkle over the herbs. Drizzle with a little honey before serving.
  • Tip: If preferred, sprinkle over freshly chopped chilli too.
