Turkish Lamb and Aubergine Pizza

Turkish Lamb and Aubergine Pizza

Ingredients
3 lamb leg steaks, trimmed (300g) and cut into thin strips
1 tablespoon olive oil
1 red onion, peeled and finely sliced
1 aubergine, trimmed and cut into small cubes
2 garlic cloves, peeled and crushed
1 teaspoon ground paprika
Salt and freshly milled black pepper
150ml tomato passata
400g ready rolled pizza dough
To serve
80g feta cheese
1½ tablespoons freshly chopped mint
1 tablespoon honey
Method
Preheat the oven 220°C, 200
°
C Fan, Gas Mark 8.
Heat half the oil in a large non-stick frying pan over a high heat. Quickly fry the lamb for 2 minutes until brown. Transfer to a plate.
Add onion to the frying pan and cook until soft, add the aubergine and cook for 5-6 minutes until golden and then add garlic and paprika. Cook for a minute and season.
Unroll the pizza dough onto a large oven or pizza tray (30cm x 8cm)
Use a spoon to smear passata onto the pizza dough, top with cooked onion, aubergine and lamb.
Place in a hot oven for 10 minutes until crisp.
Crumble over the feta cheese,then sprinkle over the herbs. Drizzle with a little honey before serving.
Tip:
If preferred, sprinkle over freshly chopped chilli too.
