Have a crack at lamb with extra guac’. Perfect for speedy lunches , cooked in just 10 minutes. 

Preparation: 15 mins  (plus 30 mins marination)
Cooking: 7 mins
Ingredients

Ingredients to make 6 large wraps (or 8 medium)

  • 600g lamb leg steaks
  • 3 tbsp olive oil
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • 2 ripe avocados
  • 2 limes
  • salt and freshly ground black pepper
  • 2 tbsp chopped coriander
  • 2 tomatoes
  • ½ cucumber
  • 1 red onion
  • 1 romaine lettuce
  • 6 large wraps (or 8 medium)
Method
  • Mix the oil and spices in a bowl, add the lamb steaks and mix well. Cover and leave to rest for 30 minutes at room temperature.
  • Mash the flesh of the avocados with a fork and add the lime juice (quantity depending on your taste) until puréed. Add salt and coriander.
  • Deseed the tomatoes and dice. Dice the cucumber and finely chop the red onion. Slice the romaine lettuce. Place all these ingredients in separate bowls.
  • Pre-heat a frying pan without oil on a high heat. When the pan is hot, add the lamb steaks and cook for 2 minutes on each side. Reduce the heat and cook for a further 2-3 minutes on a very low heat (depending on your preference and the thickness of the meat). Season to taste and leave to rest for 2 minutes.
  • Meanwhile, heat the wraps in the microwave between 2 plates.
  • Cut the meat into small strips and serve immediately along with the wraps, the guacamole and the bowls of tomatoes, cucumber, red onion and lettuce so that everyone can make up their wraps themselves
