Get some tasty thai into your midweek menu with these meatballs.

Ingredients for approx.40 meatballs

  • 400g lamb mince
  • 4-6 scallions, finely chopped
  • 1 tbsp coriander leaves, chopped
  • 1 tbsp mint leaves, chopped
  • Grated zest of 1 lime
  • Salt and pepper
  • Lime wedges, to garnish
  • Sweet chilli sauce, to serve
  • Pre-heat the oven to 200°C, Gas Mark 6 (400°F).
  • Place the lamb in a bowl. Add the remaining ingredients except the chilli sauce and mix well.
  • Roll the mixture into small balls and place them on a baking tray lined with greaseproof paper. Cook in the oven for 12 to 15 mins. Garnish with lime wedges and serve as a hot or cold snack, with sweet chilli sauce.

 Tip: you can also serve these little meatballs as a starter, with a salad.
